"Early in the morning around 3 a.m., our whole team gathers, each of us with a specific craft, a specialty, and the room starts bustling," Sarah Deale told The Star Democrat when The Flour Shop opened at 115 N. Washington Street. The building was a flower shop for decades. Bluepoint Hospitality reopened it as a bakery focused on bread on August 14, 2026.
Most early coverage focused on the lines. In a September interview, Julia Foxwell, Bluepoint's director of community engagement, said the shop sold out in about two hours early on. That describes the opening weeks. The menu describes the shop as it runs now. It works like a calendar: a set of breads baked every day, plus specialty loaves that come out on fixed days. Whether you can get a certain loaf depends on the day as much as the hour.
The Week, Loaf by Loaf
Five breads are baked daily: baguette, ciabatta, focaccia, sourdough and pretzel. The current menu at theflourshopeaston.com lists everything else by day.

The schedule is uneven, and that's useful to know. Friday has four specialty breads, the most of any day, including the challah that the opening feature described as a Friday bread. Sunday has one. Saturday is the only day both fried pastries are on the counter. Bombolini run Thursday through Saturday, filled, glazed or sugared. Crullers are Saturday and Sunday only.
What Repeats, and What Doesn't
Two loaves come back during the week. Whole Wheat Levain is baked Wednesday and Saturday. Three Seeded Sourdough is baked Thursday and Sunday. If you miss one of those, you have a second chance a few days later.
The rest appear once a week. The Orange, Cranberry, Pecan Sourdough at $8.50 and the Brioche Nanterre at $11 are Tuesday only. Cheddar Sourdough is Wednesday only. Muesli is Thursday. Fig Hazelnut Levain and Three Cheese Sourdough are Saturday. If you want the brioche for a weekend breakfast, you have to pick it up Tuesday. The schedule has no second brioche day.
Prices make the same point. The daily sourdough is $7.55. The specialty loaves run $8 to $9, and the brioche is the most expensive bread on the menu at $11. A baguette is $5 and a pretzel is $4.50. The everyday breads cost less, and the specialty loaves are the ones the calendar limits.
The pastry case is also mostly daily: butter croissant at $4.50, pain au chocolat at $4.75, almond and ham-and-cheese croissants at $6, cinnamon Danish, Black Bottom Tea Bread, a Bundt Cake of the Day, crumb cake, a Chocolate Peanut Butter Chip Cookie, and a Rugelach of the Day.
The 4 p.m. Closing Time Is the Latest It Stays Open
The shop's own site lists hours of 8 a.m. to 4 p.m., Tuesday through Sunday, closed Monday. The same page says bread sells quickly and the shop may close early once it sells out. When it opened, Bluepoint's property listing gave the hours as 8 a.m. until sold out. Neither page says what time the shelves usually empty now, so take 4 p.m. as the latest the shop will be open, not a time you can count on.
The product line has its own clock. "Everything starts with the flour," Head Baker John Aversa told The Star Democrat. He named Central Milling's stone-ground flours, and the paper notes he works only with organic flours and shapes each loaf by hand with his team. Aversa competed for Team USA at the Coupe du Monde de la Boulangerie. Deale has spent three decades in pastry, including time at Portland's PIX Patisserie, and now oversees all baking and pastry across Bluepoint's establishments. Hand-shaped loaves that start at 3 a.m. can't be topped up at noon. Once a batch is gone, the next one comes the following morning.
Whole cakes are the one item you can reserve, and they need 72 hours' notice. The menu lists Birthday, Carrot, Vanilla Bean, Double Chocolate, Vanilla Malt Salted Caramel, Lemon Citrus, Red Velvet, Almond Raspberry, Coconut Cream and Chocolate Peanut Butter. The birthday cake is $85. For a Saturday celebration, order by Wednesday.
The Second Bread Counter Is on Federal Street
If the case on Washington Street is empty, Bluepoint has another bread counter downtown. Bumble Bee To-Go, at 13 Federal Street, is a grab-and-go shop open Tuesday through Saturday from 8 a.m. to 6:30 p.m. and closed Sunday and Monday. Its bread page lists a house sourdough every day and baguettes, seeded baguettes, ciabatta, focaccia and pretzels Tuesday through Saturday, plus other loaves on certain days.
Putting the two schedules side by side gives you a simple weekly plan:
- Tuesday through Saturday: both counters are open. Bumble Bee To-Go stays open two and a half hours after The Flour Shop's 4 p.m. close.
- Sunday: The Flour Shop is the only one of the two open, with Three Seeded Sourdough and crullers.
- Monday: both are closed, according to their posted hours.
Bumble Bee To-Go sells more than bread. Its menu runs from breakfast burritos, parfaits and chia pudding in the morning to soups, salads and sandwiches at lunch, then meatballs, lasagna and whole roasted chicken for dinner. Desserts include banana pudding and black-and-white cookies. Online ordering is linked from the menu. If you get there after The Flour Shop has sold out, you can still pick up a baguette and dinner on Federal Street.
Where It Sits Among Bluepoint's Shops
The Flour Shop is part of a cluster. The Star Democrat placed it alongside Bonheur, the ice cream shop, and P. Bordier, Bluepoint's pastry and artisanal chocolate counter. The Flour Shop menu has no separate chocolate section, so for artisanal chocolate, P. Bordier is the counter to visit.
The Daily Record reported on September 28, 2026 that Bluepoint now runs 16 concepts in Easton. The company dates to 2013 and began with the café Sunflowers & Greens, before reviving empty properties on Federal Street. The same article says a Bluepoint retail wine shop is set to open later this fall, without giving a name, address or opening date. Once it opens, a Friday stop could pair challah from Washington Street with a bottle from the new shop.
One small item on the block this week. The Town of Easton has scheduled a lane closure and lane shift for conduit work on N. Washington Street between Goldsborough and Bay Streets from October 4 through October 8, 2026. The work runs overnight from 8 p.m. to 6 a.m., with traffic control in place. Those hours fall outside the shop's 8 a.m. to 4 p.m. day, so a morning bread run shouldn't be affected.
